WHO ARE WE?
Hi ! I am Caroline, a French pastry chef. After climbing the ranks within the most prestigious Michelin starred restaurants and patisseries in Paris, I fell in love for the Sydney Opera House.
Guess what? I made sure I was not far away from it and so I spent an amazing few years across the street at Park Hyatt.
For as long as I can remember, desserts have been my greatest passion. Since my childhood, the flavours, textures, and aromas of desserts have always been an endless source of inspiration for me.
Using my French background, my approach is to find local ingredients and work with seasonal produce to arouse your taste buds.
But if you think I’m doing all this alone, Fear not!
While I focus on whisking, baking and creating, Maeva my business partner, keeps everything running smoothly. You might recognise her face at our the market stall, where she loves connecting with our wonderful customers. We’re also surrounded for social media – though, I must admit, that’s not exactly my cup of tea. Thankfully we’ve got help for this website to bring our story life online.

We proudly collaborate with with small businesses and local suppliers who share our passion for quality and sustainability. By working closely with these producers we are not only ensure that our ingredients are fresh and flavorful but also support the hardworking communities around us. We believe that best pasties start with the greatest ingredients and that’s why we don’t use much sugar. So next time you savour one of our desserts, know that every bite is made with care, love and the best ingredients.
